Tabasco Sauce - 57ml
Tabasco sauce is made by mashing tabasco peppers with salt and aging the mixture in white oak barrels for up to three years:
Grow the peppers: Tabasco peppers are planted in early spring and hand-picked from August to October on Avery Island, Louisiana.
Mash the peppers: On the day of harvest, the peppers are ground into a mash with a small amount of salt.
Age the mash: The mash is aged in white oak barrels that were previously used for whiskey. The barrels are de-charred, torched, and cleaned to remove any residual whiskey.
Strain the mash: After aging, the mash is strained to remove the seeds and skins.
Mix with vinegar: The strained mash is mixed with distilled vinegar and stirred occasionally for a month.
Bottle: The finished sauce is bottled. The aging process in the white oak barrels gives Tabasco its signature complex flavor. A family member of the McIlhenny family inspects each batch of pepper mash to ensure quality. Tabasco has released special editions of their sauce, including a reserve edition aged for up to eight years and a Diamond Reserve Edition aged for up to fifteen years.
